Peanut Porridge

  • 2 cups unsalted Peanuts
  • ½ cup Granulated Sugar
  • 3 cups Water
  • 3 tablespoons Rice Flour
  • 1 tsp Vanilla Extract
  • ¼ tsp Grated Nutmeg
  • 1 Cinnamon Stick

Method

  1. Put 2 cups Peanuts into the blender.  Blend peanuts into powder.  Then add 2 cups water, sugar, and 3 tablespoons rice flour.  Blend again.
  2. In a large pan boil peanut mixture.  Keep stirring until the boiling point of porridge, to prevent lumping.  Then reduce heat.
  3. Add vanilla extract, grated nutmeg, and 1 cinnamon stick.  Stir, then cover with lid.  Simmer on a low heat for 20 minutes.
